  • 3 cups (360g) all-purpose flour
  • 3 tablespoons (36g) granulated sugar
  • 1 teaspoon (5g) baking soda
  • 1 teaspoon (5g) salt
  • 4 tablespoons (56g) cold unsalted butter, cubed
  • 3/4 cup (110g) currants
  • 1 1/4 cups (300ml) buttermilk

Instructions

  1. Preheat your oven to 400°F (200°C). Place a rack in the middle position. If using a cast iron skillet, put it in the oven to heat up. If using a baking sheet, line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt until evenly combined.
  3. Add the cold butter cubes to the flour mixture. Using a pastry cutter or two forks, cut the butter into the flour until the mixture resembles coarse meal with pea-sized bits of butter.
  4. Stir in the currants until evenly distributed.
  5. Make a well in the center of the flour mixture and pour in the buttermilk. Stir with a wooden spoon or rubber spatula until just combined. The dough should be shaggy and messy; do not overmix.
  6. Turn the dough out onto a lightly floured surface. With floured hands, gently shape it into a round loaf about 6 inches in diameter and 1 1/2 inches thick. Do not knead.
  7. Transfer the dough to the prepared baking sheet or preheated cast iron skillet.
  8. Using a sharp knife or bench scraper, cut a deep X across the top of the loaf, about 1/2 inch deep.
  9. Bake for 35-40 minutes, until the top is golden brown and the loaf sounds hollow when tapped on the bottom. Internal temperature should reach 190°F (88°C).
  10. Transfer the bread to a cooling rack and let cool for at least 15 minutes before slicing.

Notes

For best results, use cold butter and do not overmix the dough. The bread is best served warm. Store in an airtight container at room temperature for up to 3 days. Freeze for up to 3 months.
