  • 1 cup (240 ml) elderberry syrup
  • 1/4 cup (85 g) raw honey
  • 2 tablespoons (30 ml) fresh lemon juice
  • 3 tablespoons (about 30 g) unflavored gelatin powder
  • 1/2 cup (120 ml) filtered water

Instructions

  1. Pour 1/2 cup (120 ml) of filtered water into a mixing bowl. Sprinkle 3 tablespoons (about 30 g) of unflavored gelatin over the water and let it sit for 5 minutes until thickened and spongy.
  2. In a small saucepan, combine 1 cup (240 ml) elderberry syrup, 1/4 cup (85 g) raw honey, and 2 tablespoons (30 ml) fresh lemon juice. Warm over low heat, stirring gently until honey dissolves, about 3 to 5 minutes. Do not boil.
  3. Remove the syrup mixture from heat. Slowly whisk the bloomed gelatin into the warm liquid and stir continuously until fully dissolved, about 2 to 3 minutes. Avoid lumps.
  4. Carefully pour the mixture into silicone gummy molds or a prepared baking dish.
  5. Place molds in the refrigerator for at least 2 hours, preferably 3, until gummies are firm and springy.
  6. Pop gummies out of molds or cut into bite-sized squares if using a baking dish. Store in an airtight container in the refrigerator for up to 2 weeks.

Notes

Bloom gelatin first to avoid lumps. Keep heat low to preserve honey’s enzymes. Chill gummies for at least 2 hours for best texture. Dust with powdered sugar or cornstarch if gummies are sticky. Use fresh lemon juice for best flavor. For vegan version, substitute gelatin with agar-agar powder.
