Instructions

  1. Activate the yeast by combining warm water (110°F/43°C), sugar, and yeast in a small bowl. Stir gently and let sit for 5-10 minutes until foamy.
  2. In a large mixing bowl, whisk together flour and salt. Add melted butter and the activated yeast mixture. Mix until it forms a rough dough.
  3. Knead the dough for 8-10 minutes by hand on a floured surface or 6-7 minutes with a stand mixer dough hook until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  5. Preheat oven to 400°F (205°C). Slice off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden. Let cool.
  6. Punch down the dough and divide into 12 equal pieces (about 3 oz each). Roll each into a 6-inch finger-shaped stick. Make 3-4 shallow slashes along each finger to mimic knuckles.
  7. Press a sliced almond at the tip of each finger as a nail. Brush each finger with egg wash and sprinkle with coarse sea salt if desired.
  8. Place shaped breadsticks on a prepared baking sheet, cover loosely, and let rise for 20-30 minutes until puffy.
  9. Bake at 375°F (190°C) for 18-22 minutes until golden brown and crispy on the edges.
  10. While breadsticks bake, heat olive oil in a saucepan over medium heat. Sauté onions until translucent (about 5 minutes).
