  • 2 ½ cups (312g) all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 cup (200g) packed brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups (about 250g) M&M’s

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together all-purpose flour, cornstarch, baking soda, and salt. Set aside.
  3. In a large bowl, use an electric mixer to beat softened unsalted butter with packed brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, then stir in pure vanilla extract until smooth and glossy.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  6. Gently fold in M&M candies with a spatula, being careful not to crush them.
  7. Use a cookie scoop or tablespoon to drop generous mounds (about 2 tablespoons / 30g each) onto the prepared baking sheets, spacing about 2 inches apart.
  8. Bake for 10-12 minutes until edges look set but centers are still soft. Do not overbake.
  9. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack to finish cooking and keep soft.

Notes

Chill dough for 15 minutes if kitchen is warm to prevent spreading. Do not overmix dough to keep cookies tender. Use a light hand folding in M&Ms to avoid breaking candy shells. Baking one test cookie first can help avoid overbaking the whole batch.
