  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • For the Brown Sugar Glaze:
  • ½ cup (100 g) light brown sugar, packed
  • ¼ cup (56 g) unsalted butter
  • 3 tablespoons (45 ml) heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with butter or nonstick spray, then line the bottom with a parchment paper circle. Grease the parchment too.
  2. Reduce the apple cider: Pour 1 ½ cups (360 ml) of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer for about 12-15 minutes until reduced to about ¾ cup (180 ml). Set aside to cool.
  3. Whisk dry ingredients together: In a large mixing bowl, combine 2 ½ cups (300 g) all-purpose flour, 1 teaspoon baking soda, 1 ½ teaspoons baking powder, ½ teaspoon salt, 2 teaspoons cinnamon, ½ teaspoon nutmeg, and ¼ teaspoon ginger. Whisk until evenly distributed.
  4. Mix the wet ingredients: In a separate medium bowl, whisk together 1 cup (200 g) granulated sugar, ½ cup (100 g) packed light brown sugar, and ½ cup (113 g) melted butter until smooth. Add 2 room-temperature eggs one at a time, whisking well after each. Stir in 2 teaspoons vanilla extract.
  5. Add the reduced cider: Pour the cooled reduced cider into the wet mixture and whisk until combined.
  6. Combine wet and dry: Pour the wet ingredients into the bowl of dry ingredients. Use a rubber spatula to fold together gently until no streaks of flour remain. Do not overmix.
  7. Pour into prepared pan: Scrape the batter into the prepared cake pan and spread evenly. Give the pan a gentle tap on the counter to release air bubbles.
  8. Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil for the last 10 minutes.
  9. Cool in the pan on a wire rack for 15 minutes. Then run a knife around the edges, invert onto the rack, remove the parchment, and let cool completely (about 1 hour).
  10. Make the glaze: In a small saucepan, combine ½ cup (100 g) packed light brown sugar, ¼ cup (56 g) unsalted butter, and 3 tablespoons (45 ml) heavy cream. Cook over medium heat, stirring constantly, until butter is melted and mixture is smooth. Bring to a gentle boil and let bubble for 2 minutes, stirring continuously. Remove from heat, stir in 1 teaspoon vanilla and a pinch of salt. Let cool for 5 minutes.
  11. Glaze the cake: Place the cooled cake on a serving plate or wire rack with a baking sheet underneath. Pour the warm glaze over the center, then spread gently toward the edges. Let set for at least 15 minutes before slicing.
