  • 4 ounces prosciutto (thinly sliced, torn into ribbons)
  • 4 ounces salami (sliced into rounds)
  • 1/2 cup roasted almonds (unsalted)
  • 1/2 cup pumpkin seeds (pepitas)
  • 1 cup pretzel sticks (for spider legs and snacking)
  • 1/4 cup dark chocolate chips (optional)
  • Honey (optional, for drizzling)
  • Black gel icing (for spider faces)
  • Edible googly eyes (optional)
  • Fresh rosemary sprigs (for garnish)
  • 1 cup red grapes (washed, in small clusters)
  • 1 apple (sliced thin, tossed in lemon juice)

Instructions

  1. Prepare the Clementine Spiders (5 minutes): Peel 4-5 clementines carefully, keeping segments intact. For each spider, break 4 pretzel sticks in half to create 8 legs. Gently push pretzel pieces into the sides of the clementine. Use black gel icing to draw two dots for eyes. Optionally, stick on edible googly eyes with a dab of icing. Set aside on a small plate.
  2. Arrange the Cheese (3 minutes): Fan aged gouda wedges on the left side of the board. Cluster cheddar cubes next to gouda. Scatter mozzarella pearls in a small pile nearby. Space cheese out for easy grabbing.
  3. Layer the Meats (2 minutes): Fold prosciutto ribbons into loose waves and place next to cheese. Arrange salami rounds in a slight overlapping pattern. For vegetarian version, place marinated artichoke hearts in a small bowl on the board.
  4. Add the Crunchy Elements (2 minutes): Pour almonds into a small bowl and place on board. Do the same with pumpkin seeds. Arrange remaining pretzel sticks in a small bundle near the clementine spiders.
  5. Scatter the Fresh Fruit (2 minutes): Place red grape clusters in gaps between cheese and meat. Fan apple slices on the right side of the board.
  6. Add the Sweet Touches (1 minute): If using, pour dark chocolate chips into a small bowl and place on board. Drizzle honey over gouda wedges if desired.
  7. Final Assembly (3 minutes): Gently place clementine spiders on the board, spacing them out. Tuck rosemary sprigs here and there to look like spooky trees. Ensure board looks abundant but not crowded.

Notes

Clementine spiders can be assembled up to 4 hours in advance and stored in an airtight container in the fridge. For best flavor, take cheese out of the fridge 30 minutes before assembling. Don’t overcrowd the board; leave about an inch of space between food clusters. If pretzel legs feel loose, secure with toothpicks. For a dairy-free version, use cashew-based gouda or almond milk mozzarella. For gluten-free, replace pretzels with gluten-free pretzels or celery sticks.
