Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch cake pans and line the bottoms with parchment paper. Grease the sides and dust lightly with flour.
  2. In a medium bowl, whisk together the whole wheat pastry flour, coconut sugar, baking powder, baking soda, and salt. Press any lumps through a fine-mesh sieve if needed.
