  • 1 cup (245g) pumpkin puree (100% pure pumpkin)
  • ⅓ cup (80ml) pure maple syrup
  • ¼ cup (50g) packed brown sugar
  • ½ cup (120g) unsweetened applesauce
  • ¼ cup (60g) plain Greek yogurt (full-fat or 2%)
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) milk (any kind; oat milk for dairy-free)
  • ¼ cup (30g) whole wheat pastry flour (for streusel)
  • ¼ cup (50g) packed brown sugar (for streusel)
  • 1 tablespoon ground cinnamon (for streusel)
  • 2 tablespoons (30g) coconut oil, melted and slightly cooled (or melted butter)
  • ¼ cup (30g) chopped pecans or walnuts (optional, for streusel)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly spray parchment with nonstick spray.
  2. In a medium bowl, whisk together 1 ¾ cups whole wheat pastry flour, 1 teaspoon baking soda, ½ teaspoon baking powder, ½ teaspoon salt, 2 teaspoons cinnamon, ½ teaspoon nutmeg, and ¼ teaspoon ginger until evenly combined.
  3. In a large bowl, whisk together 1 cup pumpkin puree, ⅓ cup maple syrup, ¼ cup packed brown sugar, ½ cup applesauce, ¼ cup Greek yogurt, 2 eggs, 1 teaspoon vanilla extract, and ¼ cup milk until smooth and well combined.
  4. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  5. In a small bowl, combine ¼ cup whole wheat pastry flour, ¼ cup packed brown sugar, and 1 tablespoon cinnamon. Add 2 tablespoons melted coconut oil and stir with a fork until crumbly, pea-sized clumps form. Stir in nuts if using.
  6. Pour batter into prepared loaf pan and spread evenly. Sprinkle streusel topping evenly over batter, pressing gently into the surface.
  7. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent loosely with foil after 40 minutes.
  8. Cool in pan for 15 minutes, then lift out using parchment overhang and transfer to a cooling rack. Cool completely (1-2 hours) before slicing.

Notes

For best results, use room temperature ingredients. Do not overmix the batter. Press streusel gently into batter to help it stick. Let bread cool completely before slicing to avoid crumbling. Bread tastes even better the next day.
