  • 1 tablespoon kosher salt (for blanching water)
  • Ice water bath
  • 2 tablespoons unsalted butter
  • 8 ounces cremini mushrooms, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk, warmed
  • ½ cup heavy cream
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg, freshly grated
  • 1 ½ cups French’s crispy fried onions
  • ½ cup panko breadcrumbs
  • 2 tablespoons melted butter
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Blanch the green beans: Fill a large pot with water and add 1 tablespoon of salt. Bring to a rolling boil. Add the green beans and cook for exactly 3 minutes until bright green and still slightly crisp.
  3. Shock the beans: While beans are boiling, fill a large bowl with ice water. Drain the beans and immediately transfer to the ice water bath. Let sit for 3-4 minutes until completely cool. Drain well and pat dry.
  4. Make the mushroom sauce: In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced mushrooms and cook for 5-6 minutes until they release their liquid and start to brown. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Sprinkle the flour over the mushrooms and stir constantly for 1 minute. Slowly pour in the warm milk while whisking continuously. Add the heavy cream, onion powder, pepper, salt, and nutmeg. Keep stirring until the sauce thickens, about 3-4 minutes. Remove from heat.
  6. Combine everything: Place the blanched green beans in a large mixing bowl. Pour the mushroom sauce over them and gently fold until every bean is coated.
  7. Layer the casserole: Transfer half of the green bean mixture to a 9×13-inch baking dish and spread evenly. Sprinkle half of the crispy fried onions over this layer. Add the remaining green bean mixture on top.
  8. Make the topping: In a small bowl, combine the remaining crispy fried onions, panko breadcrumbs, melted butter, and Parmesan cheese (if using). Mix until everything is coated. Sprinkle evenly over the top of the casserole.
  9. Bake: Place the dish in the preheated oven and bake for 20-25 minutes, until the topping is golden brown and the sauce is bubbly around the edges. Let it rest for 5 minutes before serving.

Don’t skip the blanching step—it keeps the beans crisp. Warm the milk before adding to the sauce to prevent lumps. For extra crunch, toast the panko breadcrumbs in a dry skillet before mixing into the topping. Let the casserole rest for 5 minutes after baking to allow the sauce to set. To make ahead, assemble the casserole (without baking) and refrigerate; add 10-15 minutes to the baking time when ready to bake.
