Instructions

  1. Preheat your cast iron skillet or heavy griddle over medium-high heat for about 5 minutes until hot and sizzling.
  2. In a mixing bowl, gently season 1 pound of ground beef with 1 teaspoon kosher salt and 1/2 teaspoon black pepper. Mix lightly without overworking.
  3. Divide the beef into 6 equal balls, about 2 ounces each.
  4. Add 1 tablespoon of vegetable oil or butter to the skillet and swirl to coat the surface evenly.
  5. Place 2-3 beef balls on the skillet without overcrowding. Immediately press each ball down firmly with a sturdy metal spatula until about 1/4 inch thick. Hold for 10 seconds to set the shape.
  6. Cook patties undisturbed for 2-3 minutes until edges are deeply browned and crisp.
  7. Flip patties carefully, place a slice of American cheese on each, and cook another 1-2 minutes until cheese melts and beef is cooked through.
  8. Warm taco shells in a dry skillet or microwave for 10-15 seconds until soft and pliable.
  9. Assemble tacos by placing each cheesy patty inside a taco shell and adding optional toppings as desired.
  10. Serve immediately while hot and melty.
