This copycat Starbucks Pink Drink is a quick and easy homemade version of the popular Starbucks beverage, made with coconut milk, strawberry puree, and a touch of honey. It’s refreshing, creamy, and perfect for warm weather or any time you need a sweet pick-me-up.

  • 1 cup unsweetened coconut milk (refrigerated carton kind)
  • 1/2 cup strawberry puree (store-bought or homemade)
  • 1 tablespoon honey or agave syrup
  • 1/2 cup ice cubes
  • Freeze-dried strawberries (for garnish, optional)
  • Fresh mint sprig (for garnish, optional)

Instructions

  1. If using store-bought strawberry puree, shake or stir it well. If making your own, blend 1 cup fresh or frozen strawberries with 1 tablespoon sugar until smooth; strain through a fine-mesh sieve if desired.
  2. Fill a tall glass with 1/2 cup ice cubes.
  3. Slowly pour 1 cup unsweetened coconut milk over the ice to create a layered effect.
  4. Spoon or pour the strawberry puree over the coconut milk, allowing it to sink and create pink ribbons.
  5. Drizzle 1 tablespoon honey or agave syrup over the top. If using honey, warm it slightly for easier pouring.
  6. Gently stir the drink from bottom to top about 5-6 times to incorporate the sweetener and puree without fully destroying the layers.
  7. Garnish with freeze-dried strawberries and a fresh mint sprig if desired. Serve immediately with a straw.

Notes

For best results, use refrigerated carton coconut milk (not canned). Chill the glass in the freezer for 5 minutes before starting to keep the drink cold longer. Taste and adjust sweetness as needed. Add a splash of lime juice for extra brightness. This drink is best enjoyed immediately; leftovers can be refrigerated for up to 24 hours but texture may change.
