  • 1 cup shredded cheddar cheese (about 1/4 cup per roll-up)
  • 1 cup fresh spinach leaves (optional, a small handful per roll-up)
  • Salt and black pepper to taste

Instructions

  1. Warm the tortillas: Place one tortilla in a dry skillet over medium heat for about 15 seconds per side, or wrap in a damp paper towel and microwave for 10 seconds. Let cool for about 30 seconds before handling.
  2. Spread the cream cheese: Using a butter knife or offset spatula, spread 1-2 tablespoons of softened cream cheese evenly across the entire surface of the tortilla, leaving about a half-inch border around the edges.
  3. Layer the turkey: Arrange 3-4 slices of turkey breast flat over the cream cheese, overlapping them slightly so there are no gaps.
  4. Add the cheese and spinach: Sprinkle about 1/4 cup of shredded cheddar evenly over the turkey. If using spinach, lay a small handful of leaves on top of the cheese and press down gently.
  5. Season lightly: Add a tiny pinch of salt and a few cracks of black pepper.
  6. Roll it up tight: Starting at one edge, fold the tortilla over the filling and roll tightly, tucking the filling in as you go. Press down gently to seal the seam.
  7. Secure with toothpicks (optional): If packing for later, insert 2-3 toothpicks evenly spaced along the roll to keep it from unrolling.
