  • 1/2 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Mash the ripe banana with a fork until smooth with a few small lumps.
  2. Add the milk, peanut butter, vanilla extract, and salt. Stir until the peanut butter is mostly incorporated.
  3. Stir in the rolled oats and chia seeds (if using) until evenly combined. The mixture will look thin and soupy.
  4. Taste and add maple syrup or honey if desired.
  5. Divide the mixture evenly between two jars or airtight containers, leaving about an inch of space at the top.
  6. Cover tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir well. If too thick, add a splash of milk. Add toppings like sliced banana, extra peanut butter, chopped nuts, or cinnamon. Serve cold or microwave for 30-45 seconds if desired.
