A rich, velvety, and completely satisfying ground beef stroganoff that’s ready in just 20 minutes. Made with simple pantry ingredients in one skillet, it’s the perfect weeknight dinner that tastes like you spent hours in the kitchen.

  • 1 medium yellow onion, diced (about 1 cup)
  • 8 ounces cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 2 cups low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste (start with 1/2 teaspoon salt and 1/4 teaspoon pepper)
  • 1 cup full-fat sour cream
  • 1/4 cup cream cheese, softened (optional)
  • 8 ounces wide or medium egg noodles
  • Fresh parsley, chopped (for garnish)
  • Extra black pepper (for serving)

Instructions

  1. Bring a large pot of salted water to a boil. Cook egg noodles according to package directions (usually 6-8 minutes). Drain and set aside. Do not rinse.
  2. While water heats, place a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned and no longer pink (about 5-6 minutes). Use a slotted spoon to transfer beef to a plate, leaving about 1 tablespoon of drippings in the pan.
  3. Reduce heat to medium. Add diced onion to the skillet and cook for 2-3 minutes until softened. Add sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until golden brown.
  4. Stir in minced garlic and cook for 30 seconds until fragrant. Sprinkle flour over vegetables and stir constantly for 1 minute.
  5. Slowly pour in beef broth while stirring continuously to prevent lumps. Add Worcestershire sauce, Dijon mustard, and smoked paprika. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
  6. Reduce heat to low. Return cooked beef to the skillet. Stir in sour cream and cream cheese (if using) until completely melted and smooth. Do not let it boil. Season with salt and pepper to taste.
  7. Add drained egg noodles to the skillet and gently toss until coated in sauce. Alternatively, serve stroganoff over noodles. Garnish with fresh parsley and extra black pepper.

Notes

For best results, temper sour cream by letting it sit at room temperature for 10 minutes before adding, or stir a spoonful of hot broth into it first to prevent curdling. Cook mushrooms in batches if skillet is not large enough to avoid steaming. Season in layers for best flavor. Cook noodles al dente as they will continue cooking when tossed with hot sauce. Use full-fat dairy for best texture.
