  • 1 teaspoon black pepper, freshly ground
  • 1/2 cup sour cream, at room temperature

Instructions

  1. Prep the potatoes (15 minutes): Peel the potatoes and cut them into uniform 1-inch chunks. Place the potato chunks in a large bowl of cold water to prevent browning.
  2. Layer in the crockpot (5 minutes): Drain the potatoes and pat them dry. Place them in the slow cooker. Scatter the cubed butter and smashed garlic cloves over the top. Pour in the milk, then sprinkle with salt and pepper. Do not stir.
  3. Cook on low (4-5 hours) or high (2.5-3 hours): Cover and cook until a fork slides into a potato chunk with no resistance.
  4. Add the sour cream (2 minutes): Turn off the slow cooker (or switch to warm). Add the sour cream and stir gently. Let sit for 1 minute.
  5. Mash to desired consistency (5 minutes): Mash the potatoes right in the slow cooker. If too thick, stir in an extra 1/4 cup of warm milk. If too thin, let sit uncovered for 5-10 minutes.
  6. Taste and adjust (2 minutes): Add more salt or pepper if needed. Season slightly more if serving later.
  7. Keep warm until serving: Switch to warm setting and leave lid on. Potatoes will stay perfect for up to 2 hours. Stir and add a splash of warm milk if they start to dry out.

Don’t over-mash to avoid gluey texture. Warm the milk and sour cream before adding to prevent stiffness. Use the warm setting to hold potatoes for up to 2 hours. For a dairy-free version, use vegan butter, unsweetened oat milk, and dairy-free sour cream or plain coconut yogurt. For loaded mashed potatoes, stir in 1 cup shredded sharp cheddar and 1/2 cup cooked crumbled bacon before serving.
