  • 1/4 cup orange juice, freshly squeezed
  • 2 tablespoons honey
  • 1 tablespoon orange zest
  • Pinch of cinnamon
  • 8 ounces brie cheese
  • 6 ounces aged cheddar, sharp
  • 4 ounces goat cheese log
  • 4 ounces blue cheese (optional)
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces soppressata or salami, sliced thin
  • 3 ounces capicola
  • 2 medium oranges
  • 1/2 cup fresh cranberries for garnish
  • 1/4 cup dried figs or dates
  • 1/4 cup candied pecans or walnuts
  • 1 tablespoon fresh rosemary sprigs
  • 1 baguette, sliced thin and toasted
  • 1 cup assorted crackers
  • 1/4 cup honey for drizzling (optional)

Instructions

  1. Make the cranberry orange compote: In a small saucepan, combine 1 cup fresh cranberries, 1/4 cup orange juice, 2 tablespoons honey, and a pinch of cinnamon. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for 8-10 minutes until the mixture thickens and most berries have burst. Remove from heat, stir in orange zest, and let cool completely.
  2. Prepare the oranges: Slice one orange into thin rounds, about 1/4 inch thick. Cut each round in half. Set aside on a paper towel to absorb excess juice. Zest and juice the second orange for the compote.
  3. Bring cheese to room temperature: Remove all cheese from the refrigerator 30 minutes before assembling.
  4. Toast the baguette slices: Preheat oven to 375°F. Slice baguette into 1/2-inch rounds, arrange on a baking sheet, brush lightly with olive oil. Bake for 6-8 minutes until golden and crisp. Let cool completely.
  5. Arrange the cheeses: Place the brie wheel whole on the board. Cut aged cheddar into thin triangles or small cubes. Place goat cheese log in a small bowl or slice into rounds. Crumble blue cheese nearby.
  6. Add the meats: Fold prosciutto slices into loose ribbons or waves and place in clusters. Roll soppressata slices into cylinders or fold into quarters. Arrange capicola in a small pile.
  7. Add the fruits and compote: Spoon cooled cranberry orange compote into a small bowl and place on the board. Arrange orange slices in a fan pattern near the brie. Scatter fresh cranberries around the board. Place dried figs or dates in small clusters.
  8. Fill in with crackers and nuts: Arrange toasted baguette slices and crackers in groups around the board. Sprinkle candied pecans in the gaps. Tuck small rosemary sprigs between items. Drizzle honey over the brie and goat cheese just before serving.
  9. Final touches: Fill any empty spaces with extra crackers or cranberries. Serve immediately, or cover loosely with plastic wrap and refrigerate for up to 2 hours (add compote and honey drizzle just before serving).

Notes

Make the compote a day ahead for best flavor. Bring cheese to room temperature before serving. Don’t overcrowd the board—leave about 20% visible space. Keep wet ingredients separate from dry to prevent sogginess. For a vegetarian version, skip the meats and double up on cheese and nuts.
