  • 4 boneless pork chops (about 1-inch thick)
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions

  1. Take pork chops out of fridge 15 minutes before cooking. Pat dry with paper towels and season both sides with salt and pepper.
  2. Set up breading station: In first shallow bowl, add flour. In second bowl, whisk eggs until frothy. In third bowl, mix panko, Parmesan, garlic powder, and onion powder.
  3. Dredge each pork chop in flour, shaking off excess. Dip in egg wash, letting excess drip off. Press firmly into panko-Parmesan mixture, coating all sides. Place on clean plate.
  4. Heat large skillet over medium-high heat. Add olive oil and butter, swirling to combine. When butter stops foaming and starts to turn golden, add pork chops.
  5. Cook chops undisturbed for 3-4 minutes until golden brown. Flip with tongs and cook another 3-4 minutes.
  6. Check internal temperature with meat thermometer; it should reach 145°F (63°C).
  7. Transfer chops to cutting board and let rest 5 minutes before serving.

Notes

For thicker chops, finish in a 400°F (200°C) oven for 5-7 minutes if crust browns too quickly. Let chops rest 5 minutes before cutting to keep them juicy. Use freshly grated Parmesan for best melting and flavor.
