  • ½ cup (50g) freshly grated Parmesan cheese
  • 3 cups (90g) fresh baby spinach
  • 8 oz (225g) dried short pasta (penne, rigatoni, or fusilli)
  • 2 tablespoons (30ml) olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon (14g) unsalted butter

Instructions

  1. Prep the Chicken: Cut 1.5 lbs of chicken breast into bite-sized pieces, about 1-inch cubes. Season generously with salt, pepper, and ½ teaspoon of Italian seasoning. Let it sit while you prep the other ingredients.
  2. Sear the Chicken: Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the chicken pieces in a single layer—don’t overcrowd the pot. Cook for 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove the chicken to a plate and set aside.
  3. Sauté the Aromatics: Reduce heat to medium. Add 1 tablespoon of butter to the pot. Once melted, add 4 minced garlic cloves and ½ cup of chopped sun-dried tomatoes. Cook for about 1 minute, stirring constantly, until fragrant. Scrape up any browned bits from the bottom.
