  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 pound (450g) ground beef (80/20 blend)
  • 3 tablespoons tomato paste
  • 1 can (28 ounces / 800g) crushed tomatoes (preferably San Marzano)
  • 4 cups (960ml) low-sodium chicken broth
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste (start with 1 teaspoon salt and ½ teaspoon pepper)
  • 8 ounces (225g) lasagna noodles, broken into 1-2 inch pieces
  • 1 cup (about 250g) whole milk ricotta cheese
  • 4 ounces (115g) fresh mozzarella, shredded or torn into small pieces
  • Fresh basil, a handful, chopped, for garnish
  • ½ cup (50g) freshly grated Parmesan cheese

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the diced onion and cook for 3-4 minutes until translucent and starting to soften.
  2. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the ground beef to the pot. Break it up with a wooden spoon and cook for 5-6 minutes until browned all the way through. Spoon out excess fat, leaving about a tablespoon.
  4. Stir in the tomato paste and cook for 2 minutes, stirring constantly, until it darkens and smells sweet.
  5. Pour in the crushed tomatoes and chicken broth. Add Italian seasoning, dried oregano, red pepper flakes (if using), salt, and black pepper. Stir, scraping up any browned bits from the bottom.
  6. Bring the soup to a boil, then reduce heat to medium-low to maintain a gentle simmer. Cook for 5 minutes.
  7. Add the broken lasagna noodles, stirring to submerge them. Cover and simmer for 10-12 minutes, stirring once halfway through, until noodles are al dente.
  8. Remove the pot from the heat and let it sit for 30 seconds to cool slightly.
  9. Stir in the ricotta cheese and fresh mozzarella until the ricotta is mostly incorporated, leaving some small white swirls.
  10. Taste and adjust seasoning with more salt or pepper if needed.
  11. Ladle into bowls and top each serving with extra ricotta, freshly grated Parmesan, and fresh basil. Serve immediately.

Notes

For best results, use full-fat ricotta and add it off the heat to prevent graininess. Break lasagna noodles into uneven pieces for more texture. Let the soup rest 2-3 minutes before serving to allow flavors to settle. If soup thickens upon standing, add a splash of broth when reheating.
