  • 1 ½ cups (about 180g) finely grated zucchini, squeezed of excess moisture
  • 1 cup (175g) semi-sweet chocolate chips (optional)
  • 8 oz (226g) cream cheese, softened
  • ⅓ cup (40g) powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini finely and gently squeeze out excess moisture with a towel.
  3. In a large bowl, sift together flour, cocoa powder, baking soda, and salt; stir to combine.
  4. In another bowl, whisk sugar and eggs until pale and fluffy, about 2 minutes. Add oil and vanilla extract; mix until smooth.
  5. Pour wet ingredients into dry ingredients and fold gently until just combined. Fold in grated zucchini and chocolate chips.
  6. In a medium bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  7. Pour half of the batter into the loaf pan. Dollop half of the cream cheese mixture over it and swirl gently with a knife or skewer.
  8. Repeat layering with remaining batter and cream cheese, swirling again for a marbled effect.
  9. Bake for 55-65 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Tent with foil if top browns too quickly.
  10. Cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.
