  • 1 tablespoon coconut sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • 1/4 cup rolled oats
  • 2 tablespoons almond flour
  • 2 tablespoons coconut sugar
  • 1/4 teaspoon cinnamon
  • A pinch of sea salt
  • 1 1/2 tablespoons cold unsalted butter, cut into small cubes
  • 1 tablespoon chopped pecans or walnuts (optional)
  • 4 Medjool dates, pitted
  • 1/4 cup hot water
  • 1 tablespoon coconut cream or heavy cream
  • 1/2 teaspoon vanilla extract
  • A generous pinch of flaky sea salt

Instructions

  1. Preheat your oven to 375°F (190°C). Place two 8-ounce ramekins or a small baking dish on a baking sheet.
  2. Make the date caramel: If dates are firm, soak in hot water for 10 minutes. Drain, reserving 1/4 cup soaking water. In a small saucepan, combine dates, hot water (or soaking water), coconut cream, vanilla, and a pinch of salt. Simmer over medium heat for 3-4 minutes, mashing dates. Puree until smooth using a blender or immersion blender. Set aside.
  3. Prepare the apples: Peel if desired, core, and slice into 1/4-inch thick slices. In a medium bowl, toss apples with coconut sugar, cinnamon, nutmeg, lemon juice, and cornstarch until coated.
  4. Make the crisp topping: In a small bowl, combine rolled oats, almond flour, coconut sugar, cinnamon, and salt. Add cold butter cubes. Using a pastry cutter, forks, or fingers, work butter into dry ingredients until mixture resembles coarse crumbs with some pea-sized butter pieces. Stir in nuts if using.
  5. Assemble the crisps: Divide apple mixture evenly between ramekins or spread in baking dish. Drizzle about half of the date caramel over apples. Sprinkle crisp topping evenly over fruit.
  6. Bake for 25-30 minutes, until topping is golden brown and filling is bubbly. If topping browns too quickly, tent with foil for last 5 minutes.
  7. Let cool on a wire rack for at least 5 minutes. Warm remaining date caramel and drizzle over top. Add extra flaky sea salt if desired. Serve warm.

Notes

Don’t skip the cornstarch; it thickens the apple juices. Keep butter cold for a crumbly topping. Let the crisp rest for 5-10 minutes after baking to allow the filling to set. Make the caramel first so it has time to cool. For a vegan version, substitute butter with solid coconut oil or vegan butter, and use coconut cream in the caramel. For gluten-free, use certified gluten-free oats and almond flour.
