Lighter Orange Cranberry Quick Bread with Easy Glaze

A lighter version of classic cranberry bread, made with Greek yogurt for moisture and less butter. Tart cranberries and bright orange zest shine in this tender, crowd-pleasing loaf topped with a simple orange glaze.

  • 1 ¾ cups (210g) all-purpose flour
  • ½ cup (100g) granulated sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (120g) plain Greek yogurt (full-fat or 2%)
  • ¼ cup (57g) unsalted butter, melted and slightly cooled
  • 1 large egg, at room temperature
  • ¼ cup (60ml) fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 cup (120g) fresh or frozen cranberries (if frozen, do not thaw; toss in 1 tablespoon flour)
  • ¾ cup (90g) powdered sugar (for glaze)
  • 2–3 tablespoons fresh orange juice (for glaze)
  • ¼ teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides.
  2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together Greek yogurt, melted butter, egg, orange juice, orange zest, and vanilla extract until smooth.
  4. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  5. If using frozen cranberries, toss them in 1 tablespoon flour. Gently fold cranberries into batter.
  6. Pour batter into prepared loaf pan and spread evenly. Batter will be thick.
  7. Bake for 50-60 minutes, until golden brown and a toothpick inserted in center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil for last 10-15 minutes.
  8. Cool in pan for 10 minutes, then lift out using parchment sling and transfer to a wire rack. Cool completely before glazing.
  9. For glaze: In a small bowl, whisk together powdered sugar, 2 tablespoons orange juice, and vanilla extract. Add more orange juice 1 teaspoon at a time until thick but pourable.
  10. Drizzle glaze over cooled bread. Let set for 10 minutes before slicing.

Notes

Don’t overmix the batter to avoid tough bread. Use room temperature ingredients for best results. Check baking powder freshness. Let bread cool completely before glazing. Bread tastes even better the next day. Store in airtight container at room temperature for up to 3 days. Freeze unglazed loaf for up to 3 months.
