Lighter Iced Apple Cider Cookies with Easy Cinnamon Glaze

Soft, cakey apple cider cookies with a sweet cinnamon glaze. A happy accident that turned into a fall favorite, these lighter cookies are quick to make and perfect for cozy gatherings.

  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 1/4 cup apple cider concentrate, thawed
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup powdered sugar, sifted
  • 1/2 teaspoon ground cinnamon
  • 2–3 tablespoons milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar together until light and fluffy, about 2-3 minutes.
  3. Beat in egg, apple cider concentrate, and vanilla extract until just combined.
  4. In a separate bowl, whisk together all-purpose flour, whole wheat pastry flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to wet mixture, mixing on low or folding until no streaks of flour remain. Dough should be soft and slightly sticky.
  6. Using a 1.5-tablespoon cookie scoop, drop rounded balls of dough onto prepared baking sheets, spacing 2 inches apart.
  7. Bake for 10-12 minutes, rotating pans halfway through. Edges should be set and lightly golden, centers soft and puffed.
  8. Let cookies cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. For glaze: In a small bowl, whisk together sifted powdered sugar, cinnamon, 2 tablespoons milk, and vanilla extract until smooth. Add more milk if needed.
  10. Dip top of each cooled cookie into glaze, let excess drip off, and place back on rack. Let glaze set for 20-30 minutes.

Notes

Don’t skip the apple cider concentrate; it provides intense flavor without extra liquid. Room temperature ingredients are important for proper creaming. Watch bake time closely to avoid dry cookies. Let cookies cool completely before glazing. Double the glaze if you prefer a thicker coating.
