Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper. If you have a cooling rack, place it on top of the baking sheet.
  2. Prepare the cauliflower: Remove leaves and tough stem, cut into bite-sized florets (about 1 to 1.5 inches wide). Rinse briefly and pat very dry with a clean kitchen towel.
  3. Make the batter: In a large mixing bowl, whisk together flour, milk, garlic powder, onion powder, salt, black pepper, and smoked paprika (if using) until smooth and slightly thick (like pancake batter).
  4. Coat the cauliflower: Add dried florets to the bowl and gently toss until each floret is evenly coated. Shake off excess batter.
  5. Arrange on the baking sheet: Place battered florets in a single layer, not touching, on the prepared baking sheet.
  6. Bake for 20 minutes: Bake for 20 minutes, flipping each floret halfway through (at 10 minutes) for even browning.
  7. Make the buffalo sauce: While cauliflower bakes, combine hot sauce, melted butter, honey, and apple cider vinegar in a small saucepan. Warm over low heat, whisking occasionally, until smooth. Do not boil.
  8. Toss the baked cauliflower in sauce: Transfer baked cauliflower to a large bowl, pour warm buffalo sauce over, and gently toss with tongs until coated.
  9. Return to the oven for 5 more minutes: Spread sauced cauliflower back onto the baking sheet in a single layer. Bake for another 5-7 minutes until glossy and slightly caramelized.
  10. Serve immediately: Transfer to a serving platter, garnish with parsley or green onions if desired, and serve hot with ranch or blue cheese dressing and celery sticks.

Dry cauliflower thoroughly to prevent batter from sliding off. Flip florets halfway through baking for even crispiness. Use a cooling rack on the baking sheet for maximum crispiness.
