Light & Fresh Apple Cider Mimosa for Fall Brunch

A crisp, bubbly fall mimosa made with fresh apple cider, dry prosecco, and a hint of lemon. Perfectly balanced and surprisingly light, it’s the ideal drink for autumn brunches.

  • 1 cup (240 ml) apple cider, chilled
  • 2 cups (480 ml) prosecco, chilled (dry or extra-dry)
  • 2 tablespoons (30 ml) fresh lemon juice (from about 1 lemon)
  • 1 to 2 teaspoons (5–10 ml) maple syrup (optional)
  • Ice cubes (optional)
  • Thin apple slices, fresh rosemary sprigs, or cinnamon sticks (for garnish)

Instructions

  1. Chill all ingredients: Place apple cider and prosecco in the fridge at least 2 hours before serving.
  2. Juice the lemon: Roll the lemon on the counter for 10 seconds, cut in half crosswise, and juice into a small bowl. Strain out seeds with a fork. You should have about 2 tablespoons of juice.
  3. Mix the cider base: In a small pitcher or measuring cup, combine chilled apple cider, fresh lemon juice, and maple syrup (if using). Stir gently until maple syrup dissolves. Taste and adjust sweetness or tartness as needed.
  4. Prepare the glasses: If using ice, add a few cubes to each glass. Arrange garnishes nearby.
  5. Pour the prosecco first: Fill each glass about two-thirds full with chilled prosecco.
  6. Add the cider mixture: Slowly pour the apple cider mixture into each glass, filling to the top. The prosecco will foam; let it settle for a few seconds.
  7. Stir gently: Use a long spoon or chopstick to give the mimosa one or two gentle stirs. Avoid over-stirring to keep the bubbles intact.
  8. Garnish and serve: Slide a thin apple slice into each glass. Add a rosemary sprig or cinnamon stick. Serve immediately.

Notes

For best results, use fresh, unfiltered apple cider and a dry prosecco (Brut or Extra Dry). The cider base can be prepared up to 24 hours in advance and stored in the fridge. Do not mix prosecco ahead of time as it will go flat. Serve immediately after adding prosecco for optimal bubbles.
