These kid-approved crockpot pork chops with onion gravy are tender, flavorful, and incredibly easy to make. With just 10 minutes of prep, the slow cooker does all the work, delivering a comforting family dinner that even picky eaters love.

  • 4–6 pork chops (bone-in or boneless, about 1 inch thick)
  • 2 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 ½ cups low-sodium chicken broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides generously with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the pork chops in batches (do not crowd the pan) for 3-4 minutes per side, until deep golden brown. Transfer to a plate and set aside.
  4. Reduce heat to medium. Add the sliced onions to the same skillet and cook for 5-7 minutes, stirring occasionally, until softened and translucent. Scrape up any browned bits from the bottom of the pan.
  5. Add the minced garlic and cook for 1 minute until fragrant.
  6. Pour in the chicken broth and bring to a simmer, scraping up any remaining bits. Cook for 2 minutes.
  7. Stir in the Worcestershire sauce, Dijon mustard, dried thyme, and bay leaf.
  8. Layer half the onions and broth mixture into the bottom of a 5-6 quart crockpot.
  9. Place the seared pork chops on top of the onions, overlapping slightly if needed. Pour the remaining onions and broth over the chops.
  10. Cover the crockpot and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  11. About 30 minutes before serving, remove the pork chops to a plate and cover loosely with foil.
  12. In a small bowl, whisk together the cornstarch and cold water until smooth. Pour into the crockpot with the remaining onion mixture and stir well.
  13. Cover and cook on HIGH for 20-30 minutes, until the gravy has thickened to your liking.
  14. Remove the bay leaf. Return the pork chops to the crockpot, spooning some gravy over the top. Let warm through for 5 minutes before serving.

Notes

Don’t skip searing the pork chops—it builds deep flavor. For thicker gravy, mix another tablespoon of cornstarch with a tablespoon of water and stir in; cook 10 more minutes. Bone-in chops stay juicier. If using a larger crockpot, ensure chops are mostly submerged in liquid.
