  • 1 large egg (room temperature)
  • 2 tablespoons (28g) unsalted butter, melted (or coconut oil for dairy-free)
  • 1 tablespoon (15ml) heavy cream (or full-fat coconut milk for dairy-free)
  • 1/2 teaspoon vanilla extract (pure)
  • Pinch of salt
  • 2 tablespoons (30g) sugar-free dark chocolate chips (e.g., Lily’s), divided

Instructions

  1. Grease two 6-ounce ramekins or oven-safe mugs with butter or coconut oil. Sprinkle with a tiny pinch of cocoa powder and tap out excess.
  2. In a small microwave-safe bowl, melt 2 tablespoons butter with 1 tablespoon of the sugar-free chocolate chips in 20-second intervals, stirring until smooth. Set aside to cool slightly.
  3. In a medium bowl, whisk together almond flour, cocoa powder, erythritol, and salt until no lumps remain.
  4. In a separate small bowl, whisk the egg, heavy cream, and vanilla extract until frothy. Slowly pour in the melted butter-chocolate mixture while whisking continuously.
  5. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Batter will be thick and fudgy.
  6. Divide half the batter evenly between the prepared ramekins. Press 1/2 tablespoon of the remaining chocolate chips into the center of each ramekin. Top with remaining batter, covering the chips completely.
  7. Microwave method: Microwave one ramekin on high for 60-90 seconds, until edges are set and center jiggles slightly. Oven method: Preheat oven to 350°F (175°C). Place ramekins on a baking sheet and bake for 12-15 minutes, until tops are set and center wobbles.
  8. Let cakes cool in ramekins for exactly 1 minute. Run a knife around the edge, place a plate upside down on top, and carefully flip. Lift ramekin slowly to reveal molten center. Serve immediately.
