  • 4 cups watermelon, cut into 1-inch cubes
  • 8 ounces firm block feta cheese, cut into cubes
  • 2024 fresh mint leaves, washed and patted dry
  • 3 tablespoons honey (preferably raw or wildflower)
  • Juice of 1 large lime (about 2 tablespoons), freshly squeezed
  • Pinch of sea salt (optional)

Instructions

  1. Cut the watermelon into 1-inch cubes, aiming for uniform size.
  2. Cube the feta cheese into pieces similar in size to the watermelon cubes.
  3. In a small bowl, whisk together honey and lime juice until smooth and pourable.
  4. Thread the skewers starting with a watermelon cube, then a mint leaf folded in half, followed by a feta cube, then another mint leaf. Repeat until the skewer is full (3-4 sets per skewer).
  5. Arrange the skewers on a serving platter and drizzle evenly with the honey lime mixture.
  6. Optionally, sprinkle a pinch of sea salt over the skewers to enhance flavors.
  7. Chill the skewers in the refrigerator for 10-15 minutes before serving to let flavors meld and keep watermelon crisp.

Notes

Use ripe, seedless watermelon for best sweetness. Chill feta briefly if too crumbly before cutting. Assemble skewers close to serving time to avoid sogginess. If honey is thick, warm slightly before mixing. For vegan version, substitute feta with firm vegan cheese or marinated tofu and honey with agave syrup.
