A crisp, bright, and perfectly balanced spritz that cools, revives, and refreshes on hot summer days with fresh cucumber juice, mint, lime, and sparkling water.

Ingredients

  • 1 large cucumber, peeled and roughly chopped
  • 1215 fresh mint leaves, plus extra for garnish
  • 2 large limes, juiced (about 3 tablespoons)
  • 2 tablespoons simple syrup (or honey/agave to taste)
  • 1 cup (240 ml) sparkling water
  • Ice cubes as needed
  • Optional: splash of gin or vodka, or a dash of bitters

Instructions

  1. Peel and roughly chop the cucumber. Blend until smooth, about 30 seconds.
  2. Strain the blended cucumber through a fine mesh strainer into a bowl or pitcher, pressing to extract about ¾ cup (180 ml) juice.
  3. Rinse and pat dry the mint leaves. Place them in a serving glass or shaker and gently muddle with a wooden spoon to release oils without tearing.
  4. Add 3 tablespoons (45 ml) fresh lime juice and 2 tablespoons (30 ml) simple syrup to the muddled mint. Stir gently.
  5. Add the fresh cucumber juice to the lime and mint mixture and stir to combine.
  6. Fill the glass halfway with ice cubes, then top with 1 cup (240 ml) chilled sparkling water. Stir lightly to combine without losing fizz.
  7. Garnish with a sprig of mint and a thin cucumber slice or lime wheel on the rim. Serve immediately.

Notes

Use fresh lime juice and mint for best flavor. Gently muddle mint to avoid bitterness. Strain cucumber juice for smooth texture. Add sparkling water just before serving to keep fizz. Simple syrup amount can be adjusted to taste. Cucumber juice can be prepared ahead and refrigerated up to 24 hours.
