A quick and easy sheet pan meal featuring shrimp and roasted vegetables soaked in a rich garlic butter sauce, perfect for meal prep and busy weeknights.

  • 1 pound large raw shrimp, peeled and deveined
  • 1 medium red bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes
  • 1 small red onion, cut into wedges
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon smoked paprika
  • Juice of half a lemon
  • Salt and freshly ground black pepper, to taste
  • Optional: red pepper flakes
  • Optional: fresh basil instead of parsley

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, mix the melted butter with minced garlic, chopped parsley, smoked paprika, lemon juice, salt, and pepper. Stir gently to infuse the garlic into the butter.
  3. On a large rimmed baking sheet, arrange the sliced red bell pepper, zucchini, cherry tomatoes, and red onion wedges in a single layer.
  4. Drizzle about two-thirds of the garlic butter sauce over the vegetables and toss gently to coat evenly.
  5. Roast the vegetables in the oven for about 15 minutes until they start softening and develop golden edges.
  6. While the vegetables roast, toss the peeled shrimp in the remaining garlic butter sauce.
  7. Remove the baking sheet from the oven and nestle the shrimp evenly among the vegetables.
  8. Return the sheet pan to the oven and roast for an additional 7-9 minutes, or until the shrimp turn pink and opaque. Watch closely to avoid overcooking.
  9. Remove from oven and gently toss everything together. Taste and adjust seasoning, adding a squeeze of fresh lemon if desired.
  10. Serve warm, either plated or portioned into meal prep containers. Pair with cooked rice, quinoa, or crusty bread to soak up the garlic butter.

Notes

Do not overcrowd the pan to ensure proper roasting and caramelization. Add shrimp midway through roasting to prevent overcooking. For dairy-free, substitute butter with vegan butter or olive oil. Store leftovers in airtight containers in the fridge for up to 3 days and reheat gently.
