A simple yet sophisticated flatbread combining sweet peaches, creamy burrata, fresh basil, and a drizzle of hot honey for a perfect balance of flavors. Ready in about 25 minutes, it’s ideal for summer dining or casual gatherings.

Ingredients

Scale
  • 1 thin, sturdy flatbread or naan
  • 23 fresh ripe peaches, thinly sliced (about 1/8 inch thick)
  • 6 ounces (170g) fresh burrata cheese
  • A handful of fresh basil leaves
  • 2 tablespoons (30 ml) hot honey (honey infused with chili peppers)
  • Extra virgin olive oil for brushing and drizzling
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Optional: fresh lemon juice, toasted pine nuts

Instructions

  1. Preheat the oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat up.
  2. Wash and dry the peaches. Slice them thinly, about 1/8 inch thick. Pat dry if very juicy to prevent sogginess.
  3. Lightly brush both sides of the flatbread with olive oil. Place on a baking sheet or preheated pizza stone and bake for 5-7 minutes until it starts to crisp and turn golden.
  4. Remove the flatbread from the oven. Tear or dollop the burrata evenly across the surface.
  5. Arrange the peach slices on top, spacing them evenly.
  6. Warm the hot honey slightly and drizzle generously over the flatbread.
  7. Return the flatbread to the oven and bake for another 5-6 minutes until the burrata softens and peaches warm without losing shape.
  8. Remove from oven and scatter fresh basil leaves over the top. Season with flaky sea salt and freshly cracked black pepper.
  9. Slice into pieces and serve warm. Optionally, drizzle with extra olive oil or hot honey.

Notes

Pre-baking the flatbread is essential to prevent sogginess. Slice peaches thinly for even warming and to avoid overpowering the burrata. Add fresh basil last to preserve its aroma and texture. Watch the second bake carefully as burrata melts quickly. For a smoky twist, briefly char under the broiler after baking.
