Ingredients

Scale
  • 2 ½ cups (315 g) all-purpose flour, sifted
  • ⅓ cup (35 g) black cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup (226 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 8 ounces (225 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • A pinch of salt

Instructions

  1. Prep the Dry Ingredients: In a medium bowl, whisk together the sifted all-purpose flour, black cocoa powder, baking powder, and salt. Set aside. (Approx. 5 minutes)
  2. Cream Butter and Sugar: Using your mixer, beat the softened unsalted butter and granulated sugar on medium speed until pale and fluffy, about 3-4 minutes. (Approx. 5 minutes)
  3. Add Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Then add the vanilla extract. (Approx. 2 minutes)
  4. Incorporate Dry Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until dough comes together. Avoid overmixing. (Approx. 3 minutes)
  5. Chill the Dough: Divide dough into two discs, wrap tightly in plastic wrap, and refrigerate for at least 1 hour (or overnight).
  6. Preheat Oven and Prepare Baking Sheets: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  7. Shape the Cookies: Roll out chilled dough on a lightly floured surface to about ¼-inch (6 mm) thickness. Use cookie cutters or slice into rounds. Place cookies 2 inches apart on baking sheets. (Approx. 15 minutes)
  8. Bake: Bake for 10-12 minutes until edges are set but centers still look soft. (Approx. 10-12 minutes)
  9. Cool: Transfer cookies to wire rack to cool completely before frosting.
  10. Make the Cream Cheese Frosting: Beat softened cream cheese and butter until smooth and creamy. Gradually add powdered sugar, beating on low until incorporated, then increase speed and add vanilla extract and salt. Beat until light and fluffy. (Approx. 5 minutes)
  11. Frost the Cookies: Once cookies are cool, spread or pipe cream cheese frosting on top. Decorate as desired.

Notes

Chill dough for at least 1 hour to prevent spreading and improve texture. Use black cocoa powder for dramatic color and flavor. Soften cream cheese and butter to room temperature for smooth frosting. If frosting is too soft, chill 15-20 minutes before spreading. Dough can be refrigerated up to 2 days before baking. Store frosted cookies in airtight container in fridge up to 5 days; bring to room temperature before serving. Freeze unfrosted cookies on baking sheet, then store in freezer-safe container with parchment paper between layers.
