Instructions

  1. Place 1 cup (227g) unsalted butter in a medium saucepan over medium heat. Stir frequently until the butter melts, foams, and turns golden brown with a nutty aroma, about 5-7 minutes. Remove from heat immediately and transfer to a heatproof bowl. Let cool for about 10 minutes.
  2. In a large bowl, combine 3/4 cup (150g) granulated sugar and 3/4 cup (165g) light brown sugar. Pour in the cooled brown butter and beat with a hand or stand mixer until smooth and slightly fluffy, about 2 minutes.
  3. Add 1 large room temperature egg and 1 teaspoon pure vanilla extract. Mix until fully combined.
  4. In a separate bowl, whisk together 2 1/4 cups (280g) all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon fine sea salt.
  5. Slowly add the dry mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing.
  6. Fold in 1 1/2 cups (270g) semi-sweet chocolate chips evenly throughout the dough.
  7. Optional: Cover the dough and refrigerate for at least 30 minutes to control spreading and deepen flavor.
  8. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats.
  9. Using a cookie scoop or tablespoon, drop rounded balls of dough about 2 inches apart on the baking sheet.
  10. Bake for 10-12 minutes until edges are golden but centers still look slightly soft. They will firm up as they cool.
