Easy Slow Cooker Buffalo Chicken Dip: Perfect Party Appetizer

This creamy, spicy Buffalo chicken dip is made in the slow cooker for a set-it-and-forget-it party appetizer. Perfect for game days, potlucks, or any gathering, it features tender shredded chicken, cream cheese, ranch dressing, and a blend of cheeses for an irresistible flavor.

  • 2 pounds boneless, skinless chicken breasts (about 3–4 medium breasts)
  • 16 ounces cream cheese, softened to room temperature (two standard blocks)
  • 1 cup ranch dressing
  • 1 cup Buffalo wing sauce (such as Frank’s RedHot)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup crumbled blue cheese (optional but highly recommended)
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker. Season them lightly with salt, pepper, and a pinch of garlic powder. Pour about 1/4 cup of the Buffalo wing sauce over the chicken. Cover and cook on low for 3-4 hours, or on high for 1.5-2 hours, until the chicken is cooked through and tender enough to shred easily (internal temperature 165°F).
  2. Once the chicken is cooked, carefully transfer it to a cutting board or large bowl. Use two forks to shred it into bite-sized pieces. Reserve about 1/4 cup of the cooking liquid to add later if the dip seems too thick. Discard the rest.
  3. While the chicken is cooking, take your cream cheese out of the fridge and let it come to room temperature. If you forgot, microwave it in 15-second bursts until soft but not melted. Cut it into cubes to speed things up.
  4. In a medium mixing bowl, combine the softened cream cheese, ranch dressing, remaining Buffalo wing sauce, garlic powder, and onion powder. Mix until smooth and well combined.
  5. Return the shredded chicken to the slow cooker. Pour the cream cheese mixture over the top. Add the shredded cheddar and Monterey Jack cheeses, the blue cheese crumbles if using, and the butter cut into small pieces. Stir until all ingredients are evenly distributed.
  6. Cover the slow cooker and cook on low for 1-2 hours, or on high for 30-45 minutes. Stir every 20 minutes or so to ensure even melting. The dip is ready when the cheese is fully melted, hot and bubbly around the edges, and smooth and creamy.
  7. Taste and adjust seasoning if needed. Transfer to a serving bowl or keep in the slow cooker on the warm setting for serving. Garnish with extra shredded cheese, chopped green onions, or fresh parsley if desired.

Notes

For best results, use room temperature cream cheese and freshly shredded cheese. The dip thickens as it cools; add a splash of milk when reheating if needed. This dip tastes even better the next day. For a lighter version, use reduced-fat cream cheese and light ranch dressing.
