A quick and easy sheet pan dinner featuring caramelized Italian sausage and tender roasted vegetables. Perfect for busy weeknights, this one-pan meal delivers maximum flavor with minimal effort.

  • 1 ½ pounds Italian sausage (mild or hot), about 6 links
  • 1 large red bell pepper, cut into 1-inch chunks
  • 1 large yellow onion, cut into 1-inch wedges
  • 1 medium zucchini, halved lengthwise and sliced into ½-inch half-moons
  • 1 pound baby potatoes, halved or quartered
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. Wash and dry the baby potatoes, then halve or quarter them into roughly 1-inch pieces. Place them in a large mixing bowl and drizzle with 1 tablespoon of olive oil, ¼ teaspoon salt, and a pinch of black pepper. Toss to coat evenly.
  3. Spread the potatoes in a single layer on one side of the prepared baking sheet. Roast for 10 minutes.
  4. While the potatoes are roasting, cut the bell pepper into 1-inch chunks, the onion into wedges, and the zucchini into half-moons. Mince the garlic.
  5. In the same large mixing bowl, combine the bell pepper, onion, zucchini, and minced garlic. Add the remaining 2 tablespoons of olive oil, dried oregano, dried thyme, remaining ¾ teaspoon salt, ½ teaspoon black pepper, and red pepper flakes if using. Toss until well coated.
  6. Remove the pan from the oven. Push the potatoes to one side, then add the seasoned vegetables in an even layer on the other side. Nestle the sausage links among the vegetables.
  7. Roast for 20-25 minutes, flipping the sausage and stirring the vegetables halfway through, until the sausage is cooked through (internal temperature of 160°F) and the vegetables are tender and caramelized.
  8. Let the pan rest for 5 minutes. Sprinkle with fresh parsley before serving.

Notes

Don’t overcrowd the pan to ensure proper caramelization. Cut vegetables to a uniform size for even cooking. Flip the sausage and stir the veggies halfway through roasting. Let the pan rest for 5 minutes before serving. For best results, use fresh vegetables; frozen vegetables can lead to a watery texture.
