  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons pure maple syrup
  • 1 tablespoon unsalted butter, melted
  • ½ teaspoon kosher salt (Diamond Crystal; use ¼ teaspoon if using table salt)
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon ground cinnamon (optional)
  • Pinch of cayenne pepper (optional)
  • 45 fresh thyme sprigs (for garnish)
  • Flaky sea salt (for finishing, e.g., Maldon)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly and pat dry. Trim off the stem end and tip. Cut the squash crosswise into ½-inch thick rings. Scoop out the seeds and stringy pulp from each ring using a spoon.
  3. Place the squash rings on the prepared baking sheet in a single layer. Drizzle with olive oil and sprinkle with kosher salt, black pepper, and cinnamon (if using). Toss gently to coat, then spread back into a single layer.
  4. Roast for 15 minutes. The rings should start to brown on the bottom edges.
  5. While the squash roasts, combine the maple syrup, melted butter, and a pinch of cayenne (if using) in a small bowl. Whisk until smooth. Set aside.
  6. After 15 minutes, remove the baking sheet from the oven. Use tongs to carefully flip each ring. Drizzle the maple mixture evenly over the rings.
  7. Return the sheet to the oven and roast for another 10-12 minutes, until the edges are deep golden brown and slightly crispy, and the centers are tender and caramelized. If the syrup darkens too quickly, tent the pan loosely with foil for the last few minutes.
  8. Remove from the oven and let the rings cool on the pan for 2-3 minutes. Transfer to a serving platter, sprinkle with fresh thyme leaves and a pinch of flaky sea salt. Serve warm or at room temperature.

Notes

Don’t skip the flipping step to avoid burning. If squash rings are thicker than ½ inch, add a few minutes to roasting time. For a vegan option, replace butter with coconut oil or vegan butter. Leftovers can be stored in an airtight container in the refrigerator for up to 4 days; reheat in a 350°F oven for 5-7 minutes to restore crispiness.
