These easy overnight pumpkin spice oats are a creamy, no-cook breakfast that tastes like fall in a jar. Made with simple pantry ingredients, they’re perfect for busy mornings and picky eaters.

  • 1 cup milk of choice
  • 1/2 cup pumpkin puree
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup plain Greek yogurt
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • Pinch of ground ginger (optional)
  • Pinch of salt
  • Chopped pecans or walnuts (optional topping)
  • Dried cranberries or raisins (optional topping)
  • Extra drizzle of maple syrup (optional topping)
  • A spoonful of almond butter (optional topping)

Instructions

  1. In a medium bowl, whisk together the pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract until smooth.
  2. Sprinkle in the pumpkin pie spice, cinnamon, ginger (if using), and salt. Whisk again until evenly distributed.
  3. Add the rolled oats to the wet mixture. Stir with a spatula or spoon until every oat is coated.
  4. Divide the mixture evenly among four mason jars or small glass containers, leaving about an inch of space at the top.
  5. Put the lids on tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. Top with chopped pecans, a sprinkle of cinnamon, and an extra drizzle of maple syrup if desired. Serve cold or microwave for 30-45 seconds for a warm version.

Notes

Use old-fashioned rolled oats, not instant or steel-cut. Whisk the pumpkin first to avoid clumps. The mixture will look thin before refrigeration but thickens overnight. For extra spice, add more pumpkin pie spice. Store in the fridge for up to 5 days; best within 3 days. Do not freeze.
