This quick and affordable one-pot lasagna soup with ricotta is perfect for busy weeknights. It delivers all the comforting flavors of lasagna in a fraction of the time, using simple pantry ingredients.

  • 1 pound ground beef (80/20)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups low-sodium chicken broth
  • 1 can (15 ounces) crushed tomatoes
  • 1 can (15 ounces) tomato sauce
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups water
  • 1 cup whole-milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 cup shredded mozzarella cheese (for serving)

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned (5-6 minutes). Do not drain fat.
  2. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic, dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper. Cook for 1 minute until fragrant.
  3. Pour in chicken broth, crushed tomatoes, tomato sauce, and water. Stir, scraping up any browned bits from the bottom of the pot.
  4. Break lasagna noodles into roughly 1-inch pieces and add to the pot. Stir to submerge noodles. Bring to a boil, then reduce heat to medium-low and simmer for 12-15 minutes, stirring occasionally, until noodles are tender.
  5. While soup simmers, mix ricotta cheese and grated Parmesan in a small bowl. If using fresh parsley, fold it in. Set aside.
  6. Taste the soup and adjust seasonings as needed. If too thick, add a splash of water or broth.
  7. Ladle hot soup into bowls. Top each bowl with a generous dollop of the ricotta mixture and a sprinkle of shredded mozzarella cheese if desired. Garnish with fresh parsley and serve immediately.

Notes

For leftovers, cook noodles separately and add when serving to prevent them from becoming mushy. Always serve ricotta as a topping to avoid a grainy texture. The soup can be frozen for up to 3 months (without noodles).
