Easy One-Pot Kielbasa and White Bean Soup

A smoky, hearty soup that comes together in about 35 minutes with simple ingredients. Perfect for weeknights or feeding a crowd, this one-pot wonder features crispy kielbasa, creamy white beans, and a bright lemon finish.

  • 1214 oz kielbasa, sliced into half-moons
  • 2 cans (15 oz each) white beans (cannellini or Great Northern), with some starchy liquid
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes (fire-roasted preferred), undrained
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep your ingredients: dice the onion, mince the garlic, slice the kielbasa into 1/4-inch half-moons, and open the cans of beans and tomatoes.
  2. Heat 1 tablespoon olive oil in a large Dutch oven over medium-high heat. Add the kielbasa in a single layer and cook undisturbed for 3-4 minutes until deeply browned. Flip and cook another 3-4 minutes. Transfer to a plate and set aside.
  3. Reduce heat to medium and add the remaining 1 tablespoon olive oil. Add the diced onion and cook, stirring occasionally, until soft and translucent, about 4 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle the smoked paprika over the onions and garlic, stirring constantly for 30 seconds. Pour in the chicken broth, scraping the bottom of the pot to release browned bits (deglazing).
  5. Add the canned tomatoes (with juices), white beans (with about 2 tablespoons of their starchy liquid), bay leaf, and the browned kielbasa. Stir to combine. Bring to a gentle boil, then reduce heat to low and simmer uncovered for 10 minutes.
  6. Remove the bay leaf and discard. Stir in the lemon juice. Taste and season with salt and black pepper as needed.
  7. Ladle into bowls, garnish with fresh parsley if desired, and serve hot with crusty bread.

Notes

For a thicker soup, mash some beans against the side of the pot before adding broth. This soup tastes even better the next day. To make it vegetarian, use plant-based sausage and vegetable broth. For a spicy version, add 1/2 teaspoon red pepper flakes with the paprika.
