This easy no-churn strawberry shortcake ice cream is creamy, fruity, and loaded with buttery shortbread bits. No ice cream maker required, just 15 minutes of prep and a freezer.

  • 2 cups heavy cream
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen strawberries, hulled and chopped
  • 2 tablespoons granulated sugar
  • 1 cup shortbread cookies, roughly crushed

Instructions

  1. Macerate the strawberries: In a small saucepan over medium heat, combine the chopped strawberries and 2 tablespoons of sugar. Stir gently and let them cook for about 5-7 minutes, until the berries release their juices and the mixture becomes syrupy. Remove from heat and let it cool completely.
  2. Whip the cream: Pour the cold heavy cream into a large mixing bowl. Using a hand mixer or stand mixer fitted with the whisk attachment, beat the cream on medium-high speed until stiff peaks form, about 3-4 minutes.
  3. Mix the base: In a separate, smaller bowl, stir together the sweetened condensed milk and vanilla extract until smooth.
  4. Fold everything together: Pour the condensed milk mixture into the bowl of whipped cream. Using a rubber spatula, gently fold the two together until no streaks remain.
  5. Swirl in the strawberries: Drizzle the cooled strawberry mixture over the top of the ice cream base. Use a knife or skewer to gently swirl it through, leaving ribbons of strawberry.
  6. Fold in the shortbread: Sprinkle the crushed shortbread cookies over the top and fold them in with a few gentle strokes, leaving some chunks visible.
  7. Freeze: Pour the mixture into a loaf pan or freezer-safe container. Smooth the top, press plastic wrap directly onto the surface, and cover. Freeze for at least 6 hours, preferably overnight.

Notes

Let the ice cream sit at room temperature for 5-10 minutes before scooping if too hard. For best texture, freeze overnight. The ice cream tastes even better on day two as flavors meld.
