These no-bake energy bites are a quick, healthy snack made with simple ingredients like oats, peanut butter, and honey. Ready in just 5 minutes, they are perfect for meal prep and customizable with your favorite mix-ins.

Ingredients

Scale
  • 1 cup old-fashioned rolled oats
  • ½ cup creamy peanut butter
  • ⅓ cup honey (or maple syrup)
  • ¼ cup mini chocolate chips
  • ¼ cup ground flaxseed
  • ½ teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. Combine the dry ingredients: In a large mixing bowl, add 1 cup of old-fashioned rolled oats, ¼ cup of mini chocolate chips, and ¼ cup of ground flaxseed. Stir to distribute evenly.
  2. Add the wet ingredients: Spoon in ½ cup of creamy peanut butter, ⅓ cup of honey, ½ teaspoon of vanilla extract, and a pinch of sea salt.
  3. Mix until combined: Use a rubber spatula to stir everything together. The mixture will look dry at first, then come together into a cohesive, slightly sticky dough (about 30-45 seconds).
  4. Chill the dough (optional but helpful): Refrigerate the bowl for 15-20 minutes to make rolling easier.
  5. Roll into balls: Scoop about 1 tablespoon of the mixture and roll between your palms to form a smooth ball. Place on a parchment-lined baking sheet or plate. Repeat until all mixture is used (about 18-20 bites).
  6. Chill to set: Refrigerate the rolled bites for at least 30 minutes to firm up.
  7. Store and enjoy: Transfer to an airtight container and store in the refrigerator.

Notes

For best texture, use old-fashioned rolled oats, not quick-cooking. If dough is too dry, add a teaspoon of honey or milk. If too sticky, add a tablespoon of oats. Wet your hands with water to prevent sticking when rolling. Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.
