  • 1 1/2 cups (150 grams) graham crackers, crushed
  • 4 tablespoons (60 grams) unsalted butter, melted
  • 2 cups (300 grams) mixed berries (blueberries, raspberries, strawberries), fresh or thawed frozen
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Crush 1 1/2 cups graham crackers into fine crumbs using a food processor or rolling pin in a sealed bag.
  2. Mix the graham cracker crumbs with 4 tablespoons melted unsalted butter until evenly coated. Set aside.
  3. Pour 1 cup cold heavy whipping cream into a chilled bowl and whip with an electric mixer or whisk until soft peaks form (about 3-5 minutes).
  4. In a separate bowl, beat 8 ounces softened cream cheese until smooth. Add 3/4 cup powdered sugar and 1 teaspoon vanilla extract, mixing until fully combined. Add lemon zest if using.
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula to keep the filling light and fluffy.
  6. Assemble the parfaits by layering about 2 tablespoons graham cracker crust, 3 tablespoons cheesecake filling, and 2 tablespoons mixed berries in serving glasses or jars. Repeat layers, finishing with berries on top.
  7. Refrigerate the parfaits for at least 2 hours to allow the filling to firm up and flavors to meld. For quicker serving, chill for at least 1 hour.
