  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced

  • 1 teaspoon cornstarch mixed with 2 teaspoons water (optional, for thicker glaze)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. Wash and cut broccoli into bite-sized florets. If using bell pepper, slice into thin strips. Pat salmon fillets dry with paper towels and season both sides with salt and pepper.
  3. In a small bowl, whisk together honey, soy sauce, minced garlic, grated ginger (if using), sesame oil, and rice vinegar. Set aside about 2 tablespoons of the glaze for later.
  4. Place broccoli (and bell pepper, if using) on one side of the sheet pan. Drizzle with 1 tablespoon olive oil, sprinkle with salt and pepper, and toss to coat. Spread into a single layer.
  5. Place salmon fillets on the other side of the pan, skin-side down if they have skin. Drizzle with remaining 1 tablespoon olive oil, then pour the honey garlic glaze over the fillets (reserving the 2 tablespoons). Spread glaze evenly.
  6. Roast for 12-15 minutes, checking at 10 minutes. Salmon is done when it flakes easily with a fork and internal temperature reaches 145°F (63°C). Broccoli should be tender with crispy edges.
  7. Halfway through cooking (around 6-7 minutes), flip the broccoli with tongs and gently shake the pan.
  8. When salmon is cooked, remove from oven. Brush reserved glaze over each fillet. Let rest for 2 minutes.
  9. Sprinkle with sesame seeds, green onions, and fresh herbs if desired. Serve immediately.

Notes

For best results, use room temperature salmon. Cut broccoli into bite-sized pieces (about golf ball size) to ensure even cooking. Don’t skip the parchment paper for easy cleanup. Toast sesame seeds for extra flavor. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in oven or air fryer at 350°F for 5-7 minutes.
