Easy Honey Garlic Meatloaf with Brown Sugar Glaze

This honey garlic meatloaf is a quick and easy weeknight dinner with a sweet and sticky brown sugar glaze. Made with simple ingredients, it’s a crowd-pleaser that stays tender and moist.

  • 2 pounds (900g) ground beef, 80/20 blend
  • 1 cup (120g) plain or Italian breadcrumbs
  • ½ cup (120ml) whole milk
  • 2 large eggs, lightly beaten
  • 1 small yellow onion, finely diced (about ½ cup)
  • 4 cloves garlic, minced
  • 3 tablespoons (60g) honey
  • 2 tablespoons (30ml) soy sauce
  • 1 teaspoon (5g) salt
  • ½ teaspoon (2g) black pepper
  • 1 teaspoon (2g) dried parsley (optional)
  • ½ cup (100g) packed brown sugar
  • 2 tablespoons (40g) honey
  • ¼ cup (60ml) ketchup
  • 1 tablespoon (15ml) soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon (5ml) apple cider vinegar

Instructions

  1. Preheat your oven to 350°F (175°C). Line your loaf pan with parchment paper or spray with nonstick spray.
  2. In a large mixing bowl, combine the breadcrumbs and milk. Let them sit for 5 minutes to soak.
  3. While the breadcrumbs soak, heat a small skillet over medium heat with a drizzle of oil. Add the diced onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for another 30 seconds until fragrant. Let cool for a minute.
  4. In a small saucepan, combine the brown sugar, honey, ketchup, soy sauce, minced garlic, and apple cider vinegar. Heat over medium-low, stirring constantly, until the sugar dissolves and the mixture is smooth (about 3-4 minutes). Remove from heat and set aside.
  5. Add the ground beef, eggs, sautéed onion and garlic, honey, soy sauce, salt, pepper, and dried parsley to the bowl with the soaked breadcrumbs. Mix gently with your hands or a wooden spoon until just combined (about 30 seconds). Do not overmix.
  6. Transfer the meat mixture to the prepared loaf pan. Press it in gently, mounding slightly in the center.
  7. Spoon about ⅓ of the glaze over the top of the meatloaf and spread evenly.
  8. Bake for 45 minutes at 350°F.
  9. After 45 minutes, carefully remove the meatloaf from the oven. Spoon another ⅓ of the glaze over the top and spread evenly. Return to the oven and bake for another 15 minutes.
  10. Check for doneness: internal temperature should reach 160°F (71°C) in the center, or juices run clear with no pink.
  11. Remove from the oven and let rest in the pan for 10 minutes.
  12. While the meatloaf rests, warm the remaining glaze slightly. After 10 minutes, transfer the meatloaf to a cutting board, brush with the final layer of glaze, and slice. Serve warm.

Notes

Don’t skip the milk soak—it keeps the meatloaf tender. Mix gently to avoid toughness. Let the meatloaf rest for 10 minutes before slicing to prevent crumbling. Double the glaze if desired for extra sauce. If browning too quickly, tent with foil for the last 15 minutes.
