Easy Homemade Pumpkin Seed Trail Mix for Carving Night

A crunchy, sweet-salty trail mix featuring roasted pumpkin seeds, dried fruit, and dark chocolate chips. Perfect for Halloween carving night or any fall gathering, this easy recipe comes together in under 20 minutes.

  • 1 cup raw pumpkin seeds (pepitas)
  • 1 tablespoon olive oil or melted coconut oil
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • Pinch of cayenne pepper (optional)
  • ½ cup dried cranberries
  • ½ cup dried cherries or golden raisins
  • ½ cup dark chocolate chips
  • ¼ cup roasted almonds, roughly chopped
  • ¼ cup unsweetened coconut flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. If using store-bought pepitas, skip rinsing. If using seeds from a fresh pumpkin, rinse them in a colander under cold water, removing any stringy pulp. Pat them completely dry with a clean kitchen towel.
  3. In a medium bowl, combine the pumpkin seeds, olive oil, honey, cinnamon, salt, and cayenne (if using). Toss until every seed is coated.
  4. Spread the seeds in a single layer on the prepared baking sheet. Use a spatula to spread them out evenly.
  5. Roast for 10 minutes, then remove the pan from the oven and stir the seeds with a spatula. Return to the oven and roast for another 5-8 minutes, until the seeds are golden brown and fragrant.
  6. Let the seeds cool completely on the baking sheet for at least 15-20 minutes.
  7. Once the seeds are cool, transfer them to a large mixing bowl. Add the dried cranberries, dried cherries, chopped almonds, coconut flakes (if using), and dark chocolate chips. Toss gently to combine.
  8. Serve immediately or store in an airtight container.

Notes

Let seeds cool completely before adding chocolate to prevent melting. For extra flavor, toast coconut flakes separately in a dry skillet. Store in an airtight container at room temperature for up to 2 weeks. For a nut-free version, replace almonds with sunflower seeds.
