  • ¼ cup (60 ml) mayonnaise (light mayo recommended)
  • 2 tablespoons (30 ml) fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon anchovy paste (optional)
  • 1 garlic clove, minced
  • 2 tablespoons (25 g) grated Parmesan (for dressing)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons (30 ml) olive oil (plus 1 tablespoon for marinade and 1 tablespoon for cooking chicken)
  • Optional add-ins: cherry tomatoes, avocado slices, crispy bacon bits

Instructions

  1. Prepare the chicken marinade: In a small bowl, mix 1 tablespoon olive oil, salt, and pepper. Coat chicken breasts or thighs evenly. Let marinate for at least 10 minutes or up to 2 hours in the fridge.
  2. Cook the chicken: Heat a skillet over medium-high heat with 1 tablespoon olive oil. Add chicken and cook 5-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then slice thinly.
  3. Make the Caesar dressing: In a jar or bowl, combine mayonnaise, lemon juice, Dijon mustard, anchovy paste, minced garlic, and grated Parmesan. Whisk or shake until smooth. Slowly drizzle in olive oil while whisking to emulsify. Season with salt and pepper to taste.
  4. Prepare the lettuce: Wash and dry romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large mixing bowl.
  5. Assemble the bowls: In each meal prep container, layer chopped romaine, sliced chicken, a handful of croutons, and a sprinkle of Parmesan. Keep the dressing in a separate small container to add just before eating.
  6. Add optional extras such as cherry tomatoes, avocado slices, or crispy bacon bits if desired.
