Ingredients

Scale
  • 8 ounces sliced salami (Genoa preferred)
  • 46 thin slices prosciutto, torn into ribbons
  • Handful pepperoni slices
  • 8 ounces sharp cheddar cheese block, cut into cubes or spooky shapes
  • 6 ounces Gouda or smoked cheese, sliced thin
  • 6 ounces Brie wheel
  • 1 cup candy corn (classic tri-color)
  • 1/2 cup candy pumpkins (optional)
  • Handful pretzel sticks
  • 1/2 cup olives (green or black)
  • 1/2 cup mini dill pickles or pickle spears
  • 1/2 cup roasted almonds or pecans
  • Small bunch red grapes, washed and dried
  • 1 apple, sliced thin and tossed in lemon juice
  • 1/4 cup dried apricots or figs
  • 1/4 cup honey mustard
  • 1/4 cup fig jam or pumpkin butter
  • Edible eyeballs (optional)
  • Black licorice strings (optional)
  • Mini plastic spiders (for garnish, not eating)

Instructions

  1. Place ramekins or small bowls on the board in a triangle pattern: one at the top, two at the bottom corners. Fill with honey mustard, fig jam, and a small pile of candy corn.
  2. Place the brie wheel in the center of the board as the anchor. Optionally, score the top in a crisscross pattern and drizzle with honey.
  3. Fold salami slices into quarters and arrange in a fan pattern around the brie. Tear prosciutto into ribbons and drape loosely near the salami. Scatter pepperoni slices in small clusters.
  4. Cut cheddar into cubes (or use bat-shaped cookie cutters) and arrange in a zigzag line across the board. Fan out sliced gouda near the cheddar. Leave brie whole in the center.
  5. Tuck pretzel sticks into empty spaces for height and crunch. Place olives and pickles in small clusters. Sprinkle almonds around the edges.
  6. Place grapes in a small bunch near the top of the board. Fan out apple slices next to the cheddar. Tuck dried apricots or figs into remaining gaps.
  7. Sprinkle candy corn around the edges of the brie, in a small pile near the pretzels, and scattered lightly across the board like confetti. Add candy pumpkins in clusters near the grapes.
  8. Place edible eyeballs near the brie. Use black licorice strings to create spiderweb patterns over the meats. Tuck mini plastic spiders into candy corn piles.
  9. Step back and fill any empty spots with extra pretzels, candy corn, or grapes. The board should look full and inviting.

Notes

Add candy corn garnish just before serving to prevent stickiness. Use room temperature cheese for best flavor. The board can be assembled up to 4 hours ahead (without candy corn) and refrigerated. For a warm brie, bake at 350°F for 10 minutes before adding to the board.
