Easy Ground Beef Taco Soup with Doritos Topping

A quick and easy taco soup loaded with ground beef, beans, corn, and a crunchy Doritos topping. Ready in about 35 minutes, this crowd-pleasing soup is perfect for weeknight dinners or game day.

  • 1 pound ground beef (80/20 works great, but you can use lean if you prefer)
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 cloves garlic, minced (or 1 teaspoon garlic powder in a pinch)
  • 1 packet (1 ounce) taco seasoning (I prefer Old El Paso or McCormick for consistent flavor)
  • 1 can (14.5 ounces) diced tomatoes with green chilies (Rotel is my go-to brand)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed (or pinto beans if that’s what you have)
  • 1 can (15 ounces) corn kernels, drained (frozen corn works too, just add it straight from the freezer)
  • 1 can (14.5 ounces) beef broth (low sodium is best so you can control the salt level)
  • 1 can (8 ounces) tomato sauce
  • 1 teaspoon chili powder (adds depth without too much heat)
  • 1/2 teaspoon cumin (for that warm, earthy undertone)
  • Salt and black pepper to taste
  • 2 cups Nacho Cheese Doritos, slightly crushed (don’t crush them too fine, you want some texture)
  • 1 cup shredded Mexican blend cheese (or cheddar, or pepper jack for extra kick)
  • 1/2 cup sour cream (for serving)
  • Fresh cilantro, chopped (for garnish, optional but recommended)
  • 1 jalapeño, sliced (for heat lovers)
  • Lime wedges (for squeezing over the top)

Instructions

  1. Brown the Ground Beef: Place your Dutch oven or large pot over medium-high heat. Add the ground beef and cook, breaking it up with your wooden spoon, until it’s browned all over, about 5 to 7 minutes. If there’s excess fat, carefully drain it off, leaving about a tablespoon in the pot for flavor.
  2. Sauté the Aromatics: Reduce the heat to medium. Add the diced onion to the pot with the beef and cook for 3 to 4 minutes, stirring occasionally, until the onion becomes translucent and softened. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the Seasonings: Sprinkle the taco seasoning, chili powder, and cumin over the beef and onion mixture. Stir well to coat everything evenly. Let it cook for about 1 minute.
  4. Add the Canned Ingredients: Pour in the diced tomatoes with green chilies, tomato sauce, and beef broth. Stir to combine, scraping up any browned bits from the bottom of the pot. Add the drained black beans, kidney beans, and corn. Stir everything together until it’s well incorporated.
  5. Simmer the Soup: Bring the soup to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for 15 to 20 minutes. Taste the soup and adjust the seasoning with salt and pepper.
  6. Prepare the Toppings: While the soup simmers, prepare your toppings. Crush the Doritos slightly in the bag or in a bowl. Shred the cheese if you’re using a block. Chop the cilantro. Slice the jalapeño if you’re using it. Cut the lime into wedges.
  7. Serve: Ladle the hot soup into serving bowls. Top each bowl generously with the crushed Doritos. Sprinkle with shredded cheese. Add a dollop of sour cream. Garnish with fresh cilantro and jalapeño slices if desired. Squeeze a lime wedge over the top for brightness. Serve immediately while the chips are still crunchy.

Notes

Add the Doritos right before serving to keep them crunchy. For leftovers, store the soup and chips separately. The soup can be made in a slow cooker or Instant Pot. For a vegetarian version, skip the ground beef and use two cans of beans with vegetable broth.
