  • 4 tablespoons olive oil, divided
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons fresh parsley, chopped
  • 1.5 pounds baby potatoes, halved or quartered
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried rosemary (optional)

Instructions

  1. Prep the potatoes: Wash and dry the baby potatoes. Cut them in half (or quarters if they’re larger) so they’re roughly the same size. Toss them in a bowl with 2 tablespoons olive oil, 1 teaspoon salt, 1/2 teaspoon garlic powder, and 1/2 teaspoon dried rosemary if using. Set aside.
  2. Prep the steak: Pat the sirloin steak dry with paper towels. Cut the steak into 1-inch cubes. Season generously with 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 teaspoon smoked paprika. Toss to coat evenly.
  3. Cook the potatoes: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the seasoned potatoes in a single layer (work in batches if needed). Cook for 8-10 minutes, turning occasionally, until golden brown and crispy on all sides. The potatoes should be fork-tender when done. Transfer to a plate and set aside.
  4. Sear the steak: In the same skillet, add 2 tablespoons olive oil and heat over high heat until shimmering. Add the steak bites in a single layer—don’t overcrowd the pan. Sear for 2-3 minutes per side without moving them too much. Cook to your preferred doneness: about 4-5 minutes total for medium-rare, 6-7 minutes for medium.
  5. Make the garlic butter sauce: Reduce heat to medium-low. Add 4 tablespoons unsalted butter to the skillet with the steak. Once melted, add the minced garlic and stir constantly for 30-45 seconds until fragrant.
  6. Combine everything: Return the crispy potatoes to the skillet. Toss everything together with the garlic butter sauce until well coated. Let it all warm through together for about 1 minute.
  7. Finish and serve: Remove from heat. Sprinkle with fresh chopped parsley and serve immediately.

Notes

For extra crispy potatoes, par-boil them for 5 minutes before pan-frying. Don’t skip drying the steak—moisture prevents a good sear. Get the pan screaming hot before adding steak. Don’t overcrowd the pan; cook in batches if needed. Watch the garlic carefully—it burns in about 30 seconds. Let the steak rest for 2-3 minutes after cooking for juicier bites.
