  • 4 salmon fillets (about 6 oz / 170g each)
  • 4 tablespoons unsalted butter (56g)
  • 5–6 cloves garlic, minced
  • 1 large lemon (juice and zest)
  • 1 tablespoon olive oil (15ml)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional)
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Let salmon sit at room temperature for 10 minutes.
  2. Pat the salmon fillets dry with paper towels.
  3. Drizzle fillets with olive oil and season generously with salt and pepper on both sides. Add red pepper flakes if using. Place in a baking dish, skin-side down.
  4. In a small saucepan over medium-low heat, melt the butter. Add minced garlic and cook for about 60 seconds until fragrant. Remove from heat and stir in lemon zest and half the lemon juice.
  5. Pour the garlic butter sauce evenly over each fillet.
  6. Bake for 12-15 minutes, depending on thickness, until salmon flakes easily with a fork.
  7. Optional: Broil for 1-2 minutes for a golden finish.
  8. Remove from oven, squeeze remaining lemon juice over top. Let rest for 3-5 minutes. Sprinkle with fresh parsley and serve with extra butter sauce.

Notes

For best results, let salmon sit at room temperature for 10 minutes before cooking. Don’t overcook; salmon continues to cook after removal from oven. Use a meat thermometer for precision: 125°F (52°C) for medium. Make extra garlic butter sauce for serving over rice or vegetables.
